Sorry for the lack of posts last week. It was kind of a bust. Maevy was out of town for 1/2 the week with grandparents. We had a 4th of July party, and then I caught a stomach virus that had been going around school. I wasn’t really fully recovered until Friday morning. We’ll try to get back to the regularly scheduled programming this week. This week in the CSA- asian eggplant, garlic, cabbage, peppers, and more beets.
Here’s the plan-
Day 1- Eggplant and Red Pepper Stirfry (add chicken)- from last week
Day 2- Fresh Roasted Tomato Sauce with pasta
Day 3- Chicken Sausages with Sauteed Kohlrabi (from last week)
Day 4- Grilled Tilapia with Lemon-Basil Vinaigrette
Day 5- Shrimp Lettuce Tacos with Asian Ginger Carrot Dressing (This dressing was a big hit and I have more carrrots to use up!)
Day 6- Burgers with Grilled Veggies
