Swiss Chard Pesto Pizza with Roasted Tomatoes and Fresh Mozzarella
I might have found my favorite way to use up our Swiss Chard – pesto! As much as I want swiss chard to be like spinach, it’s not. Even after sauteing, I still think it’s a little tough. And even when following the instructions for making this pesto (where you boil the swiss chard first), I still had to break out my big food processor to finely shred/ground the swiss chard. My mini processor kept getting stuck on the chard.
Once I made the pesto, this pizza came together quickly. And shocker Maevy, the pesto-freak, loved this pizza.
