Baked Patty Pan Squash Parm
I swear to goodness I’m going post another home update next week. We still have a couple home projects that have been taking up what little time we have to work post-kids’ bedtime. That’s my excuse for not taking pictures…goal – take pictures!

There’s nothing really to this recipe and I didn’t really trust that the squash would be cooked through in such a short amount of time, but it was. We decided to stack a couple, which turned it into a lasagna-pizza combo. Carter actually ate it with no fuss, thinking it just pizza.
I probably should have mixed up the flavor profile this week, but the Caprese Sandwich and Eggplant Fritters were also good. We put the Caprese on toasted ciabatta bread which was delicious. And I actually made the eggplant fritter puree the night before; so all I had to do the night of – was fry the fritters. Shocker- Carter ate those as well. Boy loves fried food – even vegetables.
