Roasted Garlic Chicken Pesto Pizza
I apologize for the photo quality. I left the camera at work; so this pic is via phone with some picasa editing. We ate a lot of great food this week.
I only bought 1 package of chicken breasts (2), and was able to make 2 meals with them, essentially feeding 6 people. Nice! I completely messed up the roasted garlic for the pizza. The recipe instructs you to break up the garlic and roast in a muffin tin. I usually cover the whole bulb with foil/olive oil, and then roast. I ended up burning most of the garlic via the muffin tin. The pizza was still tasty with some impromptu garlic seasoning, homemade pesto, shredded chicken, cheese, and Publix pizza dough.

This week featured 2 of Maevy’s favorite things- goat cheese and pesto. She pulled most of the chicken off both the pizza and quesadilla. She helped make the quesadillas and probably ate a quarter of the goal cheese “roll” during the process. Ridiculous.
