We’re back from Christmas vacation and trying to get back in the swing of things. Here’s the plan for the week-
Day 1- Ground Beef Tacos with Yellow Mexican Rice
Day 2- Skillet Chicken with CSA Canned Green Beans
Day 3- Winter Root Vegetable Soup
(I got an immersion blender for Christmas and I really want to try it out!)
Day 4- Ground Turkey Stroganoff
To make it a little healthier, I’m going to make my own basic cream sauce instead of using the canned cream of mushroom.
Day 5- Spinach & Goat Cheese Pizza
Day 6- Seared Ahi Tuna and Salad with Wasabi Vinaigrette
